makes about 16 bars
Ingredients:
- 1 stick butter, room temperature
- 1 cup brown sugar, lightly packed
- 1 egg
- 1 1/3 cups all-purpose flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1 cup oats
- 1 can (14 oz) sweetened condensed milk (not evaporated)
- zest from 1 lemon
- juice from 2 lemons
Directions:
- Preheat oven to 350 degrees. Spray the bottom and sides of an 8-inch square pan with non stick spray and set aside.
- In the bowl of your standing mixer, beat the butter and brown sugar until they are well combined.
- Beat in the egg until combined.
- In a separate bowl, sift together flour, salt, and baking powder.
- Slowly add dry mixture to the butter/sugar mixture in your mixer until it's well combined.
- Reduce speed to "stir" and add in the oats.
- Press half of the oat mixture into the pan. (It's important to only use half or else you won't have enough left over to cover the tops of the bars!)
- In a small bowl, whisk together sweetened condensed milk, lemon juice, and lemon zest until nice and thick.
- Spread lemon mixture evenly over the layer of oats in the pan.
- Top with the remaining oat mixture, but do not press it down too hard.
- Bake for 20 to 25 minutes or until the top is golden brown. Let cool and refrigerate for 30 minutes or until set. Cut into 16 bars and enjoy!!!
- Keep leftover bars in the fridge until ready to eat.
