M&M Cookies

This past Sunday was bitterly cold in Boston with a high of 9 degrees...brrrrr! On these kinds of days when I have absolutely no reason to leave the house and choose to stay inside, I always get the urge to bake. I usually like to try new recipes and new flavor combinations, but my boyfriend requested his childhood favorite: M&M cookies! Although they are not the most creative recipe and take little effort, they sure are delicious!! We've been eating them all weekend.

M&M Cookies
I like to make my cookies on the bigger side so this recipe made exactly 2.5 dozen cookies for me.


Ingredients...
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 sticks of butter, room temperature
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 big bag (12.6 oz) of M&Ms

Directions...
  1. Preheat the oven to 350 degrees.
  2. In the bowl of your standing mixer, beat the butter until it is smooth. Add the brown and white sugars and mix until they are creamy.
  3. Add the eggs one at a time, beating well after each addition. Add the vanilla extract.
  4. Slowly mix in the flour, baking soda and salt until they are fully incorporated.
  5. Reduce the mixer speed to "stir" and dump the entire bag of M&Ms in. Let them stir until they appear to be evenly spread throughout the batter.
  6. Drop the batter by rounded tablespoonfuls onto your cookie sheets.
  7. Bake for 10 minutes for soft cookies!


Voila! Now you have delicious M&M cookies that will bring you back to your childhood. :) Wasn't that easy?
